favorite recipes

I LOVE to bake. it is one of my favorite things to have my girlfriends over and make some sweet treats. I don’t, however, enjoy cooking. I think making supper for Andrew and myself has been one of the hardest things about marriage. while I would be totally fine with a bowl of cereal he needs a full meal to fill him up. today I thought I would share some of the recipes we have liked and I haven’t dreaded making {in case there are other ladies who fall short in this area of wifery.}

HAWAIIAN BBQ CHICKEN WRAPS

Hawaiian-BBQ-Chicken-Wraps

  • 1 Tbsp olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-size pieces
  • salt and pepper
  • 1/2 cup barbecue sauce
  • 1/2 cup shredded mozzarella cheese
  • 2/3 cup chopped pineapple, fresh or canned
  • 1/4 of a red onion, chopped
  • 1 romaine heart, chopped
  • 1/4 cup fresh chopped cilantro
  • 4-5 large wheat or white tortillas

 

ORANGE CHICKEN

Marinade

  • 1 Cup BBQ Sauce (Sweet Baby Ray’s)
  • 1 Cup Sweet Orange Marmalade (Smucker’s)
  • 2 TBSP Soy Sauce

 

Crispy Chicken Ingredients:

  • 3-4 Chicken Breasts (We used 3)
  • 1 Cup Flour/1 Cup Cornstarch (You can use both or either/or)
  • 2 Eggs
  • Oil (We used vegetable oil)

 

SLOW COOKER BBQ PORK

3-4 lb Pork Loin Roast, trimmed of all visible fat
a good Pork Rub or your favorite seasonings
12 oz can Dr Pepper
Barbecue Sauce (we prefer Sweet Baby Ray’s)

  • 24 pack of Hawaiian rollls
  • 1 package of sliced ham lunch meat
  • 8 slices of swiss cheese
  • dill pickles

Dijon spread

  • 2 tablespoons minced onion
  • 1 stick of melted butter
  • 2 tablespoons Dijon mustard

 

SLOW COOKER CHICKEN BURRIOTO BOWLS

1 to 1 1/2 pounds boneless skinless chicken breasts, chicken thighs, or a mix
1 14.5-ounce can diced tomatoes
1 cup chicken stock, divided, plus more if needed
2 teaspoons chili powder
2 teaspoons salt
1 teaspoon cumin
1 cup brown rice
1 15-ounce can black beans, drained and rinsed
1 cup frozen corn
